Seafood can also be delightfully accessorized with a bit of bacon. Legendary Morton’s applies their skill with meats of all kinds to craft a mouth-watering Bacon Wrapped Sea Scallops appetizer. Order them up with the Grilled Oysters to set the stage for a truly memorable dinner experience. A Chicago classic for more than 30 years, the steakhouse is known for tender, juicy, aged USDA prime beef, but scores high marks with a full line of fine seafood.

Their name means “to bark” but local brasserie Aboyer (ab-wah-yay) could add an oink or two. Their classic Salade Lyonnaise features baby frisee, bacon lardon and a mustard vinaigrette. The “lardon,” also called lardoon or larding, is a small strip or cube of fatty bacon, or pork fat used to flavor a wide variety of cuisines. Chef Michael Lachowicz’s lively combo of American and French fare is just across from Winnetka’s Indian Hill Metra Stop making it handy for a pick-up now or visit later.
North Branch, Glenview
4520 W. Lake St., Glenview
Order up one of each of these bacon beauties for a taste test: the Three Little Pigs Pizza with sausage, pepperoni, and pecan smoked bacon or the Fifty/50 Burger with its flattop-grilled patty, Jones Farm pecan-smoked bacon, American cheese, lettuce, tomato, pickle, and burger sauce (“the original recipe…not the stolen one!”). All burgers served with hand-cut fries or pick a sub for additional $2 (side salad, waffle sweet fries, parmesan chips, nb steak frites, onion rings, cheese fries, or mac n cheese). You can even replace any burger patty with a beyond-meat patty, wood-grilled chicken breast, homemade quinoa patty, or homemade turkey patty.

Have you ever tasted bacon that’s been slow smoked over glowing Applewood embers? The amazing appetizer Tarte Flambe at Guildhall partners Nueske’s Premium Apple-Smoked Bacon (that’s award winning, btw) with gruyere, crème fraîche, fromage blanc, onion confit, and chives. The rest of your meal will also tell the tale of an American Bistro with European influences. Here, very traditional European preparations and ingredients coexist with those celebrating what is very local and inspired by new flavor combinations their chefs love.
