Long standing Northbrook staple, Kamehachi (1320 Shermer Rd., Northbrook) is a go to for locals and visitors alike with creative rolls like the Crouching Tuna-Hidden Crab roll with snow crab, cucumber, avocado, spicy tuna and citrus spicy sauce. The personal chef show at Benihana (150 N. Milwaukee Ave., Wheeling) may be the star, but their sushi options are top-flight. Their Lobster Roll doubles the fun with a traditional maki plus two Lobster Hand Rolls.

Leading Japanese steakhouse Roka Akor (Old Orchard Rd. & Skokie Blvd., Skokie) is just as committed to creating sensational raw fish entrées. Order their Omakase, which that means “I'll leave it up to you.” Guildhall Restaurant (694 Vernon Ave., Glencoe) takes an artisanal approach to everything on their menu, including their Leviathan Maki which tops lobster and salmon with asparagus, avocado, yuzu mayo, mango, fish roe and spicy togarashi.

Let the Good Times Roll: Signature Maki
Try something different with unique maki (rolled sushi) combinations. Koi Fine Asian Cuisine & Lounge (624 Davis St., Evanston) features a Truffle Tuna maki wrapping seared big eye tuna with avocado, truffle oil, Japanese mayo and garlic. The name won’t give it away, but the Smoky Bear at 5b2f Akira Sushi (143 Skokie Blvd., Wilmette) is deep fried salmon and cucumber with mozzarella, eel sauce, wasabi mayo and tempura crunch on top. Kyoto Sushi Japanese (1062 Gage St., Winnetka) gives its own name to king crab, fish roe, cucumber and avocado as Kyoto California. For a hot one, Blufish Sushi Bistro’s (2733 Pfingsten Rd., Glenview) Blazing Hamachi marries yellowtail and spicy tuna with cucumber, jalapeno, avocado, spicy mayo, red tobiko and citrusy ponzu.
